Studies on the chemistry and structure of yeast
walls have focused mainly on Saccharomyces cerevisiae
and Candida albicans. For these species, as well as for
most other yeasts that have been examined, the wall
consists of about 85%-90% polysaccharide and 10%-15% protein. |
