Method The process of yeast cell disruption using a high-pressure double-valve pilot-scale homogeniser has been investigated for the selective release of invertase. The first-order kinetics was applied for the determination of the release rate of invertase and total proteins.
Comments Invertase (beta-fructofuranosidase) is a sucrase enzyme. It catalyzes the hydrolysis (breakdown) of sucrose (table sugar) to fructose and glucose, usually in the form of inverted sugar syrup.
